Apple and Fennel Slaw

What I love to serve with my Pulled Pork rolls is a simple but delicious slaw. It is only 4 ingredients and can be made at the last moment to keep all the flavours and the crunch.

The best thing about this dish is I also have it for a quick lunch with slice of ham or just on its own. It is healthy and packs lots of flavour. I have also used it with red meats and fish dishes too as a side dish

Apple and Fennel Slaw


1 bulb of fennel

2 green apples

1 lemon

Salt and pepper to taste


  1. Wash the fennel and apples. Cut the fennel stems and fronds from the top of the fennel bulb and put to the side (you will be using these later)
  2. Slice the apples in half and remove the core. Cut the fennel in half leaving the base on the fennel so it keeps the fennel halves together. Now with a very sharp knife slice both apple and fennel finely. (If you have a mandolin this with make the task a lot easier – but be very careful).
  3. Squeeze lemon juice and season with salt and pepper over the sliced apples and fennel. With your hands mix the lemon juice well whilst squeezing the fennel and apple gently. This is a great opportunity to taste for extra seasoning.
  4. Pick the fronds from the top of the fennel and mix in with the apple, fennel and lemon.
  5. Cover and refrigerate for at least 10 minutes.
  6. Serve.
